Guilt-Free High Protein Chicken Salad

Believe it or not, this Guilt-Free High Protein Chicken Salad is one dish my kids get excited about when they know I’m making it. When most of us think of chicken salad, we think unhealthy comfort food, but I’ve got a surprise for you. This chicken salad recipe is guilt-free! It is made with plain Greek yogurt (hang with me, I promise you’ll love it) for high protein and healthy fat intake. Dried cranberries balance out the tang of the Greek yogurt while dill and lime bring a much-needed brightness to this chicken – you won’t even miss the mayo! Or you might, and you can still use mayo with this recipe – it will just no longer by guilt-free!

  • Bread
  • Rolls
  • Cucumber slices (keto-friendly, GF)
  • Lettuce wraps, I recommend butter lettuce or romaine (keto-friendly, GF)
  • Bell pepper halves (keto-friendly, GF)
  • Over crackers
  • Wraps
  • Eat it plain – this is what I usually do. The flavors are so good that you don’t need a vessel to enjoy it.

Equipment Needed for this Recipe

Crockpot – this link is to my favorite Crockpot. It is a programmable 7-Quart Cook & Carry Slow Cooker with Sous Vide and one of the best gifts I have ever received. 

Microplane

Airtight container

Ingredients:

2 cooked chicken breasts, slightly cooled, shredded or chopped 

3/4 cup plain Greek yogurt; (you may have to adjust this slightly depending on the size of the chicken breasts you use)

2 green onions, sliced

1/4 green apple, grated on a microplane

1/4 cup chopped pecans (you can toast these in the oven for added flavor if you like. 5-7 minutes at 350 degrees – toast them just until you start smelling them)

The juice of 1/2 a lime

1/4 cup dried cranberries

1/2 tbsp fresh dill, chopped (you can also use dried dill; start with 1 tsp and add more as needed)

Salt and pepper to taste

Directions:
  1. In a medium-sized bowl, mix the chicken with the Greek yogurt. Stir with a wooden spoon to coat evenly.
  2. Add the remaining ingredients and gently stir again to distribute them evenly.
  3. Serve your favorite way. Refrigerate any leftovers in an airtight container and keep for up to 3 days.
