Crockpot Ground Turkey White Chili
This Crockpot Ground Turkey White Chili recipe is great for busier weeks! Despite using lighter ingredients like ground turkey, chicken broth and cannellini beans, it offers a festive Southwestern flavor due to the addition of green chiles, red pepper flakes, and earthy cilantro. Give it a try, and it’s sure to become a go-to meal in your rotation!
Ingredients:
1 lb ground turkey
1/2 small yellow onion, chopped
4 cloves garlic, minced
Pinch of crushed red pepper flake
(1) 7 oz can green chile peppers
1 tbsp ground cumin
1 tbsp dried oregano
32 oz chicken broth
(2) 15 oz cannellini beans, drained and rinsed
(1) 15 oz can of corn
Fresh cilantro, chopped
Cotija cheese
Serve with honey cornbread, salad or warmed dinner rolls
Directions:
- Place a large skillet over med-high heat with about 1 tbsp of extra virgin olive oil. Put ground turkey in the pan and break up with a wooden spoon. Heavily season with salt and pepper (turkey is very bland and needs a good heap of seasonings). Cook until no longer pink. Add onion, garlic, red pepper flakes, green chiles, cumin and oregano. Drop the heat to low and allow flavors to blend while prepping the crockpot, stirring occasionally.
- In a crockpot, add chicken broth, cannellini beans and corn.
- Take 1/4 cup of water and pour it over the ground turkey to deglaze the pan by scraping off the brown bits from the bottom. This is where all the flavor is! Carefully, add the entire pan into the crockpot. Salt and pepper the chili and set it on low for at least 2 hours but it can go all day.
TIPS -Garnish your Crockpot Ground Turkey White Chili with cilantro, sour cream, diced avocado, green onions, your favorite hot sauce and serve with lime!
