Blueberry Peach Dump Cake
This Blueberry Peach Dump Cake is the easiest cobbler recipe you’ll ever make, not to mention absolutely delicious. Blueberry and peach are a wonderful combination, especially during the summer time. This is my go-to recipe for potlucks, BBQs and those lazy nights where I want a dessert but don’t want to put too much effort in or make a big mess.
What is a dump cake?
A dump cake is a simple, cobbler-like dessert made by layering fruit filling, dry cake mix and butter in a baking dish without mixing, and then baking it until golden brown. The name comes from the “dumping” of ingredients into the pan. It’s known for its ease of preparation and minimal cleanup, not to mention being budget-friendly.
Recommended Equipment
Ingredients:
8 tbsp butter, placed in the freezer for about 15 minutes before using. This helps to grate it easier. Plus, 1 tbsp extra to butter the baking dish
2 (15 oz) canned sliced peaches, in heavy syrup
1 cup frozen blueberries
1 box yellow cake mix
*Instead of boxed cake mix, I use a simple mix of flour, baking powder, and salt. If opting for a homemade mix, use this recipe:
- 1 1/4 cups all-purpose flour (or to make Gluten-Free, King Arthur Measure for Measure Gluten-Free Flour)
- 1 cup sugar
- 1 teaspoon baking powder (I like using Gefen Aluminum Free Baking Powder)
- 1/4 teaspoon kosher salt
Directions:
- Preheat oven to 350 degrees F and butter a 9×13 baking dish.
- Open canned peaches, pour heavy syrup from one can into a measuring cup, and reserve for later use.
- Place peaches (with remaining syrup) and blueberries directly into the prepared cake pan, spread evenly with a spatula. Top with powdered, dry cake mix.
- Pour some of the heavy syrup reserved in the measuring cup over the top of the cake mix. Take a fork and gently shake various areas of the cake mix to help it settle between the peaches and blueberries.
- Take a handheld grater and grate the frozen butter directly over the mixture. Ensure that it is evenly spread out. It does not need to cover 100% of the area, as it melts, it will spread.
- Bake for 25-30 minutes, uncovered, or until the top is golden brown
- Serve with a scoop of vanilla or peach ice cream and whipped cream
