This Salsa Peach Chicken is most likely the easiest recipe you’ll find on this website. With only three ingredients and a crockpot, your dinner will not only be delicious but also versatile in serving. Whether you want to have it over rice, wrap it in tortillas, as a finish over black bean soup or my personal favorite—enjoy it with cheesy potatoes, you can’t go wrong! If you have leftovers, you can make breakfast burritos in the morning or enjoy it over lettuce for a Mexican-style chicken salad. I recommend using a high-quality store-bought salsa or even making your own. If you have any fresh peaches lying around the house, you can slice them up and put them in the crockpot with the chicken for a burst of fresh flavor.
What about the salsa?
I recommend using a medium salsa for this dish because it adds just the right amount of heat to balance out the sweetness of the peaches. If you choose a mild salsa, the dish might taste a bit bland with only a hint of sweetness. If you enjoy spicy food, selecting a hot salsa is the perfect option to bring some heat to the sweetness of the peach preserves. Just remember to stick with a tomato-based salsa instead of a tomatillo-based one, like salsa verde.

What can you use this chicken for?
This salsa peach chicken can be served on its own as the main course with some cheesy potatoes.
You can also create a bowl using rice as the base, topping it with this chicken in addition to other items like avocado, sour cream, cilantro, etc.
Quesadillas are always a fun option! A big tortilla with melted montery jack cheese and stuffed with salsa peach chicken creates a comfort meal you won’t soon forget.
Use this chicken in tacos, burritos, over black bean soup or even a salad.
Ingredients:
16 oz of your favorite jarred salsa
13 oz jarred peach preserves
4-6 chicken breasts
Serve with cheesy potatoes, Mexican rice or black beans
Directions:
- Place all ingredients in a crockpot with salt and pepper. Set on low for 6-8 hours.
- When the chicken is finished, remove and place it in a bowl. Shred the chicken or chunk it up with 2 forks.
- Carefully, whisk the remaining preserves and salsa in the crockpot so they come together nicely and ladle it out over the chicken in the bowl. Gently toss it with tongs to ensure all of the chicken is coated.
- Make your preferred dish (tacos, soup, salad etc) and top it with a spoonful of preserves and salsa mixture.
